Most western foods are fortified with vitamins so it would be difficult to be completely devoid of all vitamins. There are fat soluble and water soluble vitamins. Vitamins A,D,E and K are fat soluble and are stored in fat cells, there fore it would take longer to deplete from these. B complex vitamins and vitamin c are water soluble. B complex vitamins include niacin, riboflavin, thiamine, and cyanocobalimin. You are more likely to manifest deficiency from B complex first.

Most people typically do not manifest these as most foods are now fortified with them. Those that are malnourished such as alcoholics may manifest B12, folate and thiamine deficiency leading to problems such as anemia, neurologic conditions such as gait changes, neuropathy and cognitive impairment. Additionally strict vegans that avoid any animal based products can develop a B12 deficiency but it can take years to manifest sometimes
